Description

Delicious and cheesy ground beef enchiladas that are easy to make and loved by everyone.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (for serving)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat.
  3. Stir in the chili powder, cumin, salt, and black pepper, cooking for an additional 2 minutes.
  4. Remove the skillet from heat and add half of the enchilada sauce to the beef mixture, stirring to combine.
  5. Spread a thin layer of the remaining enchilada sauce on the bottom of a 9×13-inch baking dish.
  6. To assemble the enchiladas, place about 1/4 cup of the beef mixture in the center of each tortilla. Sprinkle with a little cheese, then roll up and place seam-side down in the baking dish.
  7. Once all tortillas are filled and placed in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let the enchiladas cool for a few minutes before serving. Top with sour cream and chopped cilantro.

Notes

  • For a spicier kick, add diced jalapeños to the beef mixture or use a spicy enchilada sauce.
  • Substitute ground turkey or chicken for a leaner option, or use black beans for a vegetarian version.
