- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 packet taco seasoning
- 1 cup crushed tortilla chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Drain excess fat and stir in the taco seasoning, black beans, kidney beans, diced tomatoes, and corn.
- In a greased baking dish, layer half of the beef mixture, followed by half of the sour cream and half of the cheese.
- Repeat the layers with the remaining ingredients.
- Top with crushed tortilla chips and the remaining cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add more vegetables like bell peppers or onions for extra flavor.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- For a spicier version, add jalapeños or use spicy taco seasoning.
