Carrot Tots are a healthy and tasty snack made from grated carrots and potatoes, perfect for kids and adults alike.

- 2 cups grated carrots
- 1 cup shredded potatoes (about 1 medium potato)
- 1/2 cup breadcrumbs (plain or seasoned)
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- Cooking spray or olive oil for baking
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the grated carrots, shredded potatoes, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
- Using your hands, form the mixture into small oval-shaped tots, about 1 to 1.5 inches long. Place them on the prepared baking sheet, leaving some space between each tot.
- Lightly spray the tops of the tots with cooking spray or drizzle with olive oil to help them crisp up while baking.
- Bake in the preheated oven for 20-25 minutes, or until the tots are golden brown and crispy, flipping them halfway through for even cooking.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- To make these tots gluten-free, substitute regular breadcrumbs with gluten-free breadcrumbs.
- For added flavor, mix in some chopped fresh herbs like parsley or dill before forming the tots.
