Description

A refreshing and crunchy salad made with shredded carrots, diced apples, and a creamy yogurt dressing, perfect for a light meal or side dish.

Ingredients

Scale
  • 4 cups shredded carrots
  • 2 cups diced apples (about 2 medium apples)
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the shredded carrots, diced apples, raisins, and chopped walnuts if using. Toss to mix the ingredients evenly.
  2. In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
  3. Pour the dressing over the carrot and apple mixture. Stir well to coat all the ingredients evenly with the dressing.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled as a refreshing side dish or light lunch.

Notes

  • For added sweetness, substitute maple syrup for honey or use a mix of different nuts like pecans or almonds.
  • To make it vegan, replace Greek yogurt with a dairy-free yogurt alternative and use agave syrup instead of honey.
