Description

Braised Beef Osso Bucco is a delicious comfort dish featuring tender beef shanks braised in a rich sauce of vegetables, wine, and herbs.

Ingredients

Scale
  • 2 pounds beef shanks, cut into 1.5-inch thick slices
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 2 cups beef broth
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 bay leaf
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef shanks with salt and pepper on all sides.
  3. In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef shanks and sear them for about 4-5 minutes on each side until browned. Remove the shanks and set them aside.
  4. In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for another minute until fragrant.
  5. Pour in the white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 2-3 minutes.
  6. Stir in the diced tomatoes, beef broth, thyme, and bay leaf. Return the beef shanks to the pot, ensuring they are submerged in the liquid.
  7. Cover the pot with a lid and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  8. Once done, remove the pot from the oven. Discard the bay leaf and stir in the lemon zest.
  9. Serve the osso bucco hot, garnished with fresh parsley.

Notes

  • For a richer flavor, consider adding a tablespoon of tomato paste when sautéing the vegetables.
  • If you prefer a thicker sauce, remove the beef shanks once cooked, and simmer the sauce on the stovetop for an additional 10-15 minutes to reduce it before serving.
