- 1 pound salmon fillet, skin removed and cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust for spice preference)
- 1 tablespoon lime juice
- 2 green onions, sliced (for garnish)
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a shallow bowl, mix the flour, salt, and pepper. In another bowl, beat the egg. Place the panko breadcrumbs in a third bowl.
- Dredge each salmon piece in the flour mixture, shaking off any excess. Dip it into the egg, then coat it with panko breadcrumbs, pressing gently to adhere. Place the coated salmon bites on the prepared baking sheet.
- Bake for 12-15 minutes, or until the salmon is cooked through and the coating is golden brown.
- While the salmon is baking, prepare the sauce by mixing the mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl.
- Once the salmon bites are done, remove them from the oven and let them cool for a few minutes. Serve with the sauce drizzled on top or on the side, garnished with sliced green onions.
Notes
- For added crunch, consider air frying the salmon bites at 375°F for about 8-10 minutes instead of baking.
- For a twist, try adding a teaspoon of garlic powder to the flour mixture or a sprinkle of sesame seeds to the panko for extra flavor.
